Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or grease it with olive oil.
Make the Dough: In a large bowl, whisk together the flour, sugar, yeast, and salt. Create a well in the center and pour in the warm water and 2 tablespoons of olive oil. Stir until a shaggy dough forms.
Knead the Dough: Turn the dough onto a floured surface and knead for 3-5 minutes until smooth and elastic. Form into a ball and let rest for 10 minutes.
Shape the Breadsticks: Roll the dough into a rectangle about 15x10 inches and transfer to your baking sheet. Press your fingertips into the dough to create indentations.
Add the Toppings: Brush the dough with the remaining olive oil and melted butter. In a bowl, mix the cheeses, garlic powder, herbs, and red pepper flakes. Spread the mixture evenly over the dough.
Score the Dough: Use a pizza cutter or knife to score the dough into 12-16 breadsticks without cutting all the way through.
Bake: Bake for 15-18 minutes, until the cheese is bubbly and golden brown. Optionally, broil for 1-2 minutes for extra color.
Garnish and Serve: Sprinkle fresh parsley on top and serve warm.
Notes
For extra flavor, add roasted garlic powder or swap some mozzarella for provolone.
Breadsticks are best enjoyed fresh but can be reheated in an oven at 350°F for 5-7 minutes.
