Ingredients
  

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt

Wet Ingredients:

  • 1 cup whole milk or oat milk
  • 2 large eggs
  • 1/3 cup melted butter or olive oil

The Stars:

  • 8 strips cooked bacon chopped
  • 1 cup shredded sharp cheddar
  • ½ cup shredded mozzarella

Optional Add-ins:

  • 2 tbsp chopped chives or green onions
  • ½ tsp crushed red pepper flakes

Instructions
 

Preheat Oven & Prep Pan

  • Preheat to 350°F (175°C).
  • Grease or line a loaf pan with parchment paper.

Mix Dry Ingredients

  • In a large bowl: whisk together flour, baking powder, and salt until combined.

Combine Wet Ingredients

  • In a separate bowl: whisk together milk, eggs, and melted (but not hot) butter.

Combine & Fold

  • Pour wet into dry. Stir until just mixed — don’t overwork.
  • Fold in bacon, cheeses, and any optional add-ins.
  • Tip: Batter should be thick but scoopable.

Bake

  • Pour batter into loaf pan and smooth the top.
  • Bake 45–55 minutes, until golden and a toothpick comes out clean.

Cool & Serve

  • Cool in pan for 10 minutes, then transfer to a wire rack.
  • Slice and enjoy warm for best flavor!
