BBQ Chicken Salad

For the Salad:
- 2 lbs boneless skinless chicken breasts
- ¼ cup BBQ dry rub
- 8 cups chopped romaine lettuce
- 1 cup cherry tomatoes halved
- 1 cup corn kernels grilled or fresh
- 1 avocado diced
- ½ cup black beans drained
- ⅓ cup red onion thinly sliced
- ¼ cup crumbled cotija or feta cheese
For the Dressing:
- ½ cup mayonnaise
- ¼ cup sour cream
- ¼ cup buttermilk
- ¼ cup BBQ sauce
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- 1 garlic clove minced
- 2 tbsp fresh cilantro chopped
Marinate Chicken: Rub chicken with BBQ seasoning. Let sit 30+ mins.
Grill Chicken: Preheat grill to 375°F. Grill 5-7 mins per side until 165°F. Brush with extra BBQ sauce last 2 mins. Rest 5 mins, then slice.
Make Dressing: Whisk all dressing ingredients until smooth. Chill until ready to use.
Assemble: Layer romaine, tomatoes, corn, beans, avocado, and onion. Top with chicken, cheese, and cilantro. Drizzle with dressing.
