Ingredients
  

For the Salad:

  • 2 lbs boneless skinless chicken breasts
  • ¼ cup BBQ dry rub
  • 8 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 cup corn kernels grilled or fresh
  • 1 avocado diced
  • ½ cup black beans drained
  • cup red onion thinly sliced
  • ¼ cup crumbled cotija or feta cheese

For the Dressing:

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup buttermilk
  • ¼ cup BBQ sauce
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 garlic clove minced
  • 2 tbsp fresh cilantro chopped

Instructions
 

  • Marinate Chicken: Rub chicken with BBQ seasoning. Let sit 30+ mins.
  • Grill Chicken: Preheat grill to 375°F. Grill 5-7 mins per side until 165°F. Brush with extra BBQ sauce last 2 mins. Rest 5 mins, then slice.
  • Make Dressing: Whisk all dressing ingredients until smooth. Chill until ready to use.
  • Assemble: Layer romaine, tomatoes, corn, beans, avocado, and onion. Top with chicken, cheese, and cilantro. Drizzle with dressing.

Notes

  • Meal Prep: Store components separately for up to 4 days.
  • Variations: Add tortilla strips, swap ranch for Greek yogurt, or add mango for sweetness.
  • Vegetarian: Use grilled tofu or jackfruit instead of chicken.
