Ingredients
  

For the Shrimp:

  • 1.5 lbs large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • Zest of 2 limes
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

For the Creamy Slaw:

  • 2 cups shredded cabbage
  • 1/2 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • Salt and pepper to taste

Additional Taco Components:

  • 8-10 small corn or flour tortillas
  • Extra cilantro for garnish
  • Lime wedges
  • Optional: Sliced avocado

Instructions
 

1️⃣ Prepare the Creamy Slaw:

  • In a mixing bowl, whisk together Greek yogurt, mayonnaise, apple cider vinegar, honey, salt, and pepper.
  • Toss with shredded cabbage and set aside to let the flavors develop.

2️⃣ Marinate the Shrimp:

  • In a bowl, combine olive oil, garlic, lime zest, lime juice, cilantro, cumin, chili powder, salt, and pepper.
  • Add shrimp and marinate for 10-15 minutes (no longer to prevent over-marinating).

3️⃣ Cook the Shrimp:

  • Heat a large skillet over medium-high heat.
  • Cook shrimp for 2-3 minutes per side until pink and slightly charred.

4️⃣ Warm the Tortillas:

  • Heat tortillas on a dry skillet or griddle until warm and slightly charred.

5️⃣ Assemble the Tacos:

  • Layer each tortilla with creamy slaw, followed by shrimp.
  • Garnish with extra cilantro, a squeeze of lime, and optional sliced avocado.
