Classic Chicken Noodle Soup
Nothing beats a steaming bowl of homemade chicken noodle soup when you need warmth and comfort!

For the Soup Base
- 1 whole chicken 4-5 lbs or 3 lbs chicken parts
- 4 large carrots peeled & chopped
- 3 celery stalks thinly sliced
- 1 large yellow onion diced
- 8 oz wide egg noodles or rice/zucchini noodles for gluten-free
- 6-8 cups water or chicken broth
Seasoning Essentials
- 2-3 sprigs thyme
- 2 bay leaves
- ¼ cup fresh parsley chopped
- Kosher salt & black pepper to taste
- Optional Dash of white wine
1️⃣ Prepare the Chicken
If using a whole chicken, remove giblets and rinse.
Place in a large stockpot with cold water.
Bring to a gentle simmer, skimming off any foam.
Cook for 45-60 minutes until the chicken is tender.
2️⃣ Build the Flavor Base
Remove chicken and strain broth through a fine-mesh sieve.
In the same pot, sauté onion, carrots, and celery for extra depth.
Pour strained broth back into the pot.
3️⃣ Assemble the Soup
Shred cooked chicken (discarding bones & skin) and return to the pot.
Add noodles and cook until just tender.
Season with salt & pepper, garnish with fresh parsley, and serve!
