Ingredients
  

  • 2 lbs chuck roast or stewing beef cut into 1.5-inch cubes
  • Cornstarch or arrowroot powder for thickening
  • Gluten-free certified beef broth
  • Red wine optional, gluten-free
  • 2 cups carrots chunked
  • 2 cups potatoes chunked
  • 2 medium onions diced
  • 2 stalks celery chopped
  • 8 oz mushrooms quartered
  • 4-6 cloves garlic
  • Fresh thyme and rosemary
  • Bay leaves
  • Sea salt and black pepper

Instructions
 

  • Brown meat in small batches
  • Sauté vegetables separately
  • Combine all ingredients in cooking vessel
  • For slow cooker: Cook on low for 8-10 hours
  • For stovetop: Simmer for 2.5-3 hours
  • Adjust thickness with cornstarch slurry if needed
  • Let stew rest before serving

  • Tastes better the next day
  • Can be frozen for up to 3 months
  • Store in refrigerator for up to 4 days
  • Use room temperature ingredients
  • Season gradually throughout cooking
  • Can substitute gluten-free dark beer for wine
