Ingredients
  

Chicken Tenders:

  • 2 pounds boneless skinless chicken breasts, cut into strips
  • 2 cups buttermilk

Breading:

  • 1.5 cups all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Egg Wash:

  • 2 eggs beaten
  • Oil:
  • 3-4 cups vegetable canola, or peanut oil

Optional Sauces:

  • Honey mustard
  • Barbecue sauce
  • Ranch dressing

Instructions
 

Prepare the Chicken:

  • Marinate the chicken strips in buttermilk for at least 30 minutes, preferably overnight.

Prepare the Breading:

  • In a bowl, mix flour, cornmeal, smoked paprika, garlic powder, onion powder, salt, and pepper.

Double-Breading:

  • Remove chicken from buttermilk and coat in the flour mixture.
  • Dip into beaten eggs, let excess drip off.
  • Coat again in the flour mixture, pressing firmly.
  • Let the breaded chicken rest for 10 minutes.

Frying:

  • Heat oil to 350°F - 375°F in a deep fryer or heavy pot.
  • Fry chicken in batches for 3-5 minutes until golden and crispy.
  • Drain on paper towels.

Serve:

  • Serve hot with fries and your favorite dipping sauces.

Notes

  • Variations: Use panko breadcrumbs for extra crunch.
