Equipment

  • Large skillet or frying pan

Ingredients

  • 1 pound flank steak or sirloin thinly sliced
  • 8 cloves fresh garlic minced
  • 1 pound pasta fettuccine or linguine recommended
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon butter
  • 1/2 cup beef broth
  • 1/4 cup freshly grated Parmesan cheese
  • Fresh parsley for garnish
  • Salt and freshly ground black pepper to taste

Instructions

Prepare the Pasta:

  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.

Cook the Beef:

  • Season beef slices with salt and pepper.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
  • Sear beef in batches for 2-3 minutes per side until browned. Remove and set aside.

Make the Garlic Sauce:

  • In the same skillet, add remaining olive oil and butter.
  • Add minced garlic and cook for 30-45 seconds until fragrant.
  • Deglaze the pan with beef broth, scraping up any browned bits.

Combine and Serve:

  • Add cooked pasta and beef to the skillet. Toss to coat in the sauce.
  • Stir in Parmesan cheese and reserved pasta water as needed to create a silky sauce.
  • Garnish with fresh parsley and serve immediately.

Notes

  • For a creamier sauce, add 1/4 cup heavy cream or cream cheese.
  • Substitute chicken broth if beef broth is unavailable.
  • Add vegetables like spinach or mushrooms for extra flavor and nutrition.
