Grilled Chicken Burrito Bowls with Rice

For the Grilled Chicken:
- 1½ lbs boneless skinless chicken breasts
- 2 tbsp olive oil
- 3 tbsp lime juice
- 2 cloves garlic minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp dried oregano
- ½ tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
For the Cilantro Lime Rice:
- 2 cups long-grain white rice
- 3¾ cups water or chicken broth
- 1 tbsp olive oil
- 1 tsp salt
- Juice of 2 limes
- ½ cup fresh cilantro chopped
For Assembly & Toppings:
- 1 can 15 oz black beans, rinsed and drained
- 1 cup corn kernels fresh, frozen, or fire-roasted
- 1 large avocado sliced or diced
- 1 cup cherry tomatoes halved
- ½ red onion finely diced
- 1 cup shredded lettuce
- ½ cup shredded cheese cheddar, Monterey Jack, or Mexican blend
- ¼ cup sour cream or Greek yogurt
- Fresh lime wedges & extra cilantro for garnish
- Hot sauce or salsa optional
Step 1: Marinate the Chicken
Mix olive oil, lime juice, garlic, chili powder, cumin, oregano, smoked paprika, salt, and pepper in a bowl.
Coat chicken in the marinade and refrigerate for 30 minutes (or up to 4 hours).
Step 2: Cook the Cilantro Lime Rice
Rinse rice under cold water.
In a saucepan, bring rice, broth, olive oil, and salt to a boil. Reduce heat, cover, and simmer for 15-18 minutes.
Let it rest, then fluff with a fork and mix in lime juice and cilantro.
Step 3: Grill the Chicken
Preheat grill or grill pan to medium-high.
Grill chicken for 5-7 minutes per side until internal temp reaches 165°F.
Let rest for 5 minutes, then slice.
Step 4: Assemble the Bowls
Start with a base of rice, then add sliced chicken, beans, and corn.
Top with avocado, tomatoes, onion, lettuce, cheese, and sour cream.
Garnish with lime wedges and hot sauce if desired.
