Ingredients
  

For the Grilled Chicken:

  • lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 3 tbsp lime juice
  • 2 cloves garlic minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

For the Cilantro Lime Rice:

  • 2 cups long-grain white rice
  • cups water or chicken broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • Juice of 2 limes
  • ½ cup fresh cilantro chopped

For Assembly & Toppings:

  • 1 can 15 oz black beans, rinsed and drained
  • 1 cup corn kernels fresh, frozen, or fire-roasted
  • 1 large avocado sliced or diced
  • 1 cup cherry tomatoes halved
  • ½ red onion finely diced
  • 1 cup shredded lettuce
  • ½ cup shredded cheese cheddar, Monterey Jack, or Mexican blend
  • ¼ cup sour cream or Greek yogurt
  • Fresh lime wedges & extra cilantro for garnish
  • Hot sauce or salsa optional

Instructions
 

Step 1: Marinate the Chicken

  • Mix olive oil, lime juice, garlic, chili powder, cumin, oregano, smoked paprika, salt, and pepper in a bowl.
  • Coat chicken in the marinade and refrigerate for 30 minutes (or up to 4 hours).

Step 2: Cook the Cilantro Lime Rice

  • Rinse rice under cold water.
  • In a saucepan, bring rice, broth, olive oil, and salt to a boil. Reduce heat, cover, and simmer for 15-18 minutes.
  • Let it rest, then fluff with a fork and mix in lime juice and cilantro.

Step 3: Grill the Chicken

  • Preheat grill or grill pan to medium-high.
  • Grill chicken for 5-7 minutes per side until internal temp reaches 165°F.
  • Let rest for 5 minutes, then slice.

Step 4: Assemble the Bowls

  • Start with a base of rice, then add sliced chicken, beans, and corn.
  • Top with avocado, tomatoes, onion, lettuce, cheese, and sour cream.
  • Garnish with lime wedges and hot sauce if desired.
