Cupcakes:
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter softened
- ¾ cup granulated sugar
- ¼ cup honey
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup buttermilk
- 1½ cups fresh peaches diced
Frosting:
- 8 oz cream cheese softened
- ¼ cup unsalted butter softened
- 3 cups powdered sugar sifted
- 2 tbsp honey
- 1 tsp vanilla extract
- Pinch of salt
Preheat oven to 350°F (175°C). Line muffin tin with cupcake liners.
Whisk dry ingredients (flour, baking powder, baking soda, salt) in a bowl.
Cream butter and sugar until fluffy. Add honey, eggs, and vanilla; mix well.
Alternate adding dry ingredients and buttermilk to the batter. Fold in diced peaches.
Fill liners ⅔ full. Bake 18-22 minutes. Cool completely.
For frosting, beat cream cheese and butter until smooth. Add honey, vanilla, and salt. Gradually mix in powdered sugar.
Frost cooled cupcakes and garnish with peach slices or a honey drizzle.
