Ingredients
  

For the Brownies:

  • ½ cup 1 stick unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • cup cocoa powder
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

For the Mint Layer:

  • 2 cups powdered sugar
  • 2 tablespoons unsalted butter softened
  • 2 tablespoons heavy cream
  • ½ teaspoon peppermint extract
  • 2-3 drops green food coloring optional

For the Chocolate Ganache:

  • 1 cup semisweet chocolate chips
  • cup heavy cream

Instructions
 

  • 1️⃣ Prepare the Brownies:
  • Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  • In a saucepan, melt butter over low heat. Remove from heat and whisk in sugar, eggs, and vanilla until smooth.
  • In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder.
  • Gradually fold the dry ingredients into the wet mixture until combined.
  • Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Let the brownies cool completely before adding the mint layer.
  • 2️⃣ Make the Mint Layer:
  • Beat together powdered sugar, softened butter, heavy cream, peppermint extract, and food coloring until creamy and spreadable.
  • Spread evenly over the cooled brownies. Refrigerate for 15 minutes to set.
  • 3️⃣ Make the Chocolate Ganache:
  • Heat heavy cream until just warm (do not boil). Pour over chocolate chips and let sit for 2 minutes.
  • Stir until smooth, then pour over the mint layer.
  • Refrigerate for another 20 minutes until ganache is set.
  • 4️⃣ Serve & Enjoy:
  • Lift brownies out using the parchment paper, slice into squares, and serve!

Notes

  • For an extra minty kick: Add ½ teaspoon peppermint extract to the brownie batter.
  • Make it gluten-free: Substitute all-purpose flour with a 1:1 gluten-free blend.
  • Storage: Keep in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
