1️⃣ Prepare the Brownies:
Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
In a saucepan, melt butter over low heat. Remove from heat and whisk in sugar, eggs, and vanilla until smooth.
In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder.
Gradually fold the dry ingredients into the wet mixture until combined.
Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Let the brownies cool completely before adding the mint layer.
2️⃣ Make the Mint Layer:
Beat together powdered sugar, softened butter, heavy cream, peppermint extract, and food coloring until creamy and spreadable.
Spread evenly over the cooled brownies. Refrigerate for 15 minutes to set.
3️⃣ Make the Chocolate Ganache:
Heat heavy cream until just warm (do not boil). Pour over chocolate chips and let sit for 2 minutes.
Stir until smooth, then pour over the mint layer.
Refrigerate for another 20 minutes until ganache is set.
4️⃣ Serve & Enjoy:
Lift brownies out using the parchment paper, slice into squares, and serve!
