Ingredients
  

  • 1 lb flank steak thinly sliced
  • 8 oz wide rice noodles
  • 3 tbsp brown sugar
  • ¼ cup soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 3 garlic cloves minced
  • 1 tbsp fresh ginger grated
  • 1 red chili sliced
  • 1 bell pepper julienned
  • 4 green onions cut 2" lengths
  • 2 tbsp cornstarch
  • ¼ cup water

Instructions
 

  • Marinate Beef: Toss steak with 1 tbsp soy sauce + 1 tsp cornstarch.
  • Cook Noodles: Boil per package, rinse, toss with 1 tsp oil.
  • Make Sauce: Whisk brown sugar, soy sauces, oyster sauce, vinegar, + 1 tbsp cornstarch.

Stir-Fry:

  • Sear beef in hot oil (1 min/side). Remove.
  • Sauté garlic, ginger, chili 30 sec. Add peppers.
  • Return beef + noodles. Pour sauce. Toss 2 mins.
  • Finish: Add green onions + sesame oil. Serve immediately!

Notes

  • Spicy: Double chili or add 1 tsp chili crisp
  • Vegetarian: Swap beef for tofu + veg broth
  • Gluten-Free: Use tamari instead of soy sauce
  • Make-Ahead: Prep sauce/veggies 1 day ahead
