Ingredients
  

For the Broth Base:

  • 2 tablespoons olive oil
  • 1 large onion diced
  • 3 medium carrots diced
  • 2 celery stalks diced
  • 4 garlic cloves minced
  • 8 cups chicken broth
  • 2 bay leaves

For the Protein and Pasta:

  • 1 pound boneless skinless chicken breasts (or thighs)
  • 1 cup orzo pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

For the Signature Brightness:

  • Zest of 2 lemons
  • 1/4 to 1/3 cup fresh lemon juice 2-3 lemons
  • 1/4 cup fresh dill chopped
  • Salt and freshly ground black pepper to taste

For Serving (Optional):

  • 1/2 cup heavy cream optional
  • Fresh dill sprigs
  • Lemon wedges
  • Cracked black pepper

Instructions
 

Step 1: Prepare the Aromatic Base

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion, carrots, and celery for 5-7 minutes until softened.
  • Add garlic and cook for 30-60 seconds until fragrant.

Step 2: Build the Broth

  • Pour in chicken broth, add bay leaves, oregano, and thyme.
  • Submerge chicken breasts in the broth.
  • Simmer for 20 minutes until chicken is fully cooked.
  • Remove chicken and set aside to cool.

Step 3: Cook the Orzo

  • Bring the broth back to a gentle boil and add the orzo.
  • Cook for 8-10 minutes until al dente, stirring occasionally.
  • Shred or dice the cooked chicken.

Step 4: Final Touches

  • Return shredded chicken to the pot.
  • Stir in lemon zest, lemon juice, and fresh dill.
  • (Optional) Stir in heavy cream for a richer texture.
  • Season with salt and pepper to taste. Remove bay leaves.

Step 5: Serve & Enjoy

  • Ladle soup into bowls.
  • Garnish with fresh dill, lemon wedges, and cracked black pepper.
  • Serve hot with crusty bread, if desired.

Notes

  • For extra brightness: Add more lemon juice.
  • For a thicker texture: Stir in a beaten egg (Avgolemono-style).
  • For added greens: Toss in spinach or kale before serving.
  • For a heartier meal: Use shredded rotisserie chicken and add extra orzo.
  • For a spicy twist: Add red pepper flakes or drizzle with chili oil.
