  • 2 pounds about 5–6 medium Honeycrisp or Fuji apples, thinly sliced
  • 1 cup all-purpose flour
  • 2/3 cup granulated sugar
  • 3 large eggs
  • 1/2 cup whole milk
  • 4 tablespoons melted salted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cardamom
  • 3/4 teaspoon fine sea salt

Instructions
 

  • Prepare Apples: Thinly slice apples to 1/16-inch thickness using a mandoline. Toss with lemon juice to prevent browning.
  • Make Batter: Whisk eggs and sugar until pale. Add melted butter, milk, and vanilla. Sift in flour, baking powder, and spices. Mix until smooth.
  • Layer Cake: Alternate layers of apple slices and batter in a greased loaf pan, starting and ending with apples.
  • Bake: Bake at 375°F for 65–70 minutes until golden and a toothpick comes out clean.
  • Cool: Let cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  • Serve: Dust with powdered sugar and serve with vanilla ice cream or caramel sauce.
