  • 1 large onion diced
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 cans 14.5 oz each diced tomatoes
  • 1 can 15 oz pinto beans, drained and rinsed
  • 3 cups mixed frozen vegetables
  • 1 cup frozen corn
  • 1 teaspoon chili powder optional for spice
  • Salt and pepper to taste

Instructions
 

  • Brown the Beef: In a large pot or Dutch oven, brown the ground beef over medium heat. Drain any excess fat.
  • Sauté Vegetables: Add the diced onion and minced garlic to the pot. Cook until the onion is translucent, about 3-4 minutes.
  • Add Liquids and Vegetables: Pour in the beef broth, diced tomatoes, pinto beans, mixed frozen vegetables, and corn. Stir to combine.
