Ingredients
  

  • 1 lb ground beef or turkey/chicken
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 medium bell pepper diced
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 4 cups broth beef, chicken, or vegetable
  • 1 packet taco seasoning
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt & pepper to taste

Instructions
 

  • Brown the meat – In a large pot over medium-high heat, cook the ground beef until browned. Drain any excess fat.
  • Sauté the aromatics – Add diced onion, garlic, and bell pepper. Sauté for 2-3 minutes until softened.
  • Add remaining ingredients – Stir in diced tomatoes, black beans, corn, broth, taco seasoning, cumin, chili powder, salt, and pepper.
  • Simmer – Let the soup cook for at least 20 minutes on low heat, stirring occasionally.
  • Taste & Adjust – Add more seasoning if needed.
  • Serve & Garnish – Top with shredded cheese, sour cream, diced avocado, or cilantro.

Notes

  • For a spicier version, add extra chili powder, jalapeños, or hot sauce.
