Ingredients
  

  • 3/4 lb 375g boneless chicken breasts or thighs
  • 1 20 oz can crushed pineapple in 100% juice
  • 1 cup sugar-free barbecue sauce
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup light soy sauce
  • 1 red bell pepper optional
  • 1 green bell pepper optional
  • 1 red onion optional
  • 2 lbs chicken tenderloins in chunks

Instructions
 

  • Cut chicken breasts into small pieces.
  • In a slow cooker, mix pineapple juice, brown sugar, and soy sauce.
  • Add chicken pieces, crushed pineapple, and barbecue sauce. Stir well.
  • Cook on low heat for 6-8 hours or high heat for 2-2.5 hours. If using frozen chicken, add an extra 45 minutes to 1 hour.
  • Check internal temperature; it should be 165°F (74°C).
  • Optionally, shred the chicken and mix it back into the sauce.
  • Serve over rice, with veggies, or in a bun.

  • Use a hand mixer for easy shredding.
  • To thicken the sauce, use a cornstarch slurry.
